I have completed my third class from Nicole's Classes Online and loved it just as much as the first two. This time it was a class on taking pics of Babies, Toddlers, & Kids. I learned a ton and feel like I have some good tools to use when I am taking everyday shots as well as the more posed kind. The picture above was part of the creative shooting section. We were supposed to pretend we had been hired by Gerber to take a photo for an ad campaign. I tried hard to make the colors interesting...it helped that Conrad's eyes are so blue!!

Alright folks, I don't know about you but I am so excited for our family reunion coming up!!! I'm especially looking forward to the annual dance party (come on, you know you are too :). I don't know how many of you watch the show "So you think you can dance" so just in case you don't I wanted to fill you in on a little secret. They have declared July 31st as National Dance Day and as a part of that Tabitha and Napoleon (two choreographers on the show) have choreographed a little number. I thought it might be fun if we learned it for the reunion since we are bound to have a dance party and National Dance Day happens to fall on our reunion. What do you think? The dance is designed for all ages, all levels - no worries. If you just get the feet down, that's great! Announcing the birth of Benjamin Lance German, born May 14th at 1:57 p.m. He weighed 6 lbs, 10 oz. and was 21 inches long. He is soooooooooo cute! We are enjoying every moment with him. Mom flew down to Provo Friday to help out and has been amazing. I couldn't do it without her! I hope you all enjoy the photos of our new addition. I'm sure there will be many more to share in the coming weeks and months. Love you all, Megan and Lance

Also, per Lauren's request here are a couple of my favorite fall recipes.

White Chicken Chili

½ stick butter
¼ cup flour
¾ cup chicken broth
2 cups half and half
1 ½ tsp chili powder
1 tsp cumin
½ tsp salt
½ tsp pepper
2 small cans diced green chilies
3 cans Great Northern beans (Bush brand are best)
1 cup diced cooked chicken
½ onion, chopped and sautéed
1 ½ cup Monterey Jack cheese

In a large pot, melt butter then wisk in flour. Gradually add broth and cream and bring to a low boil over med heat until thick. Wisk constantly so it won’t burn. Stir in seasonings, then add the rest of the ingredients. Top with sour cream.

Super Easy Chocolate Chip Pumpkin Cookies

1 box Dry Spice Cake Mix
16 oz. Canned pumpkin (not pie pilling)
1 cup chocolate chips

Blend together cake mix and pumpkin and then stir in the chips. Drop teaspoonfuls onto a greased cookie sheet and bake for 12-14 minutes at 375 degrees.

Which means that I am ready for Fall food. What is your favorite Fall recipe? I am in love with the Butternut & Fontina Ravioli they have at Costco right now. It tastes so good with a creamy Parmesan sauce and Italian sausage. It reminds me of one of my favorite Fall recipes...Butternut Squash Sauce with Sage. I got this from my dear friend Paige. It tastes great over gnocchi.

Butternut Squash Sauce with Sage

1 large (1 ½ lb) butternut squash (peeled and cubed)
2 T. olive oil
2 shallots, minced
1 bay leaf
1 pinch of ground nutmeg
6 fresh sage leaves, sliced into thin strips
1 C. chicken broth
½ C. freshly grated Parmesan (used as a garnish)

Cook shallots in the oil until they begin to soften. Toss in squash and cook for a few minutes until then begin to caramelize in the oil. Add remaining ingredients (except cheese) and cook until squash is soft, but still holds its shape (about 8-10 minutes). Puree mixture and serve warm.

Day at the Lake

So, this is a huge post, but I wanted to put as many pictures as I could. I also tried to get everyone in one, but somehow Aunt Teresa didn't get any screen time. She's a sneaky one. =)
This was so much fun!! I had a blast! I hope everyone else did. I'll put more pictures up of other activities. I have over 500 pictures, so if anyone wants copies I can burn a disc for you. Just holla atchya girl!! =)

My New Favorite Dessert

I have always loved bread pudding...it is the best combination of yummy bread, milk, eggs, and sugar. Last year I had bread pudding at a local restaurant that was made out of cubed cinnamon rolls...yum! I have kept that idea in the back of my head and finally made it today. OH MY GOODNESS!!! You have to try this!

CINNAMON ROLL BREAD PUDDING WITH CHOCOLATE AND BANANAS

6 Cinnamon rolls (these are nice large rolls, frosted, and I used some mini chocolate chips in them too! I froze them so I wouldn't eat all of them the last time I made cinnamon rolls and then let them defrost for 15 minutes before cutting)
3 eggs
2 1/2 cups whole milk
1 teaspoon vanilla
1/4 teaspoon salt
1/3 cup sugar
1 banana, sliced
1/4 cup mini chocolate chips to sprinkle on top
Small can of sweetened condensed milk (if you want to go way overboard...it is worth it!!)

Cube the cinnamon rolls and set aside

In a large bowl, whisk together the eggs, vanilla, salt, and sugar. Add the milk and stir. Add the cubed rolls and fold the liquids in.

Pour the bread mixture into a 9x13 greased pan. Distribute the bananas evenly throughout the pan, putting them over and under the bread. Sprinkle with mini chocolate chips. Cover and place in the fridge for at least 30 minutes (I left it in there for 6 hours today and it was fine).

Preheat oven to 350 degrees and place pan in middle of oven. Bake for 40-50 minutes or until knife inserted in center comes out almost clean.

Pour sweetened condensed milk over entire pan or individual servings...serve warm!

Check this out! Grace and Ashley (our neighbor's kid) are the same age, but Ashley weighs at least 10 pounds more than Grace, but guess who has the bully child? That's right, ME. I'm trying not to laugh in the background, and I feel a bit guilty for filming instead of breaking up the fight, but it was just too funny! I couldn't resist!

Roasted Potato Salads

Serves six.

ingredients

1 ear fresh corn, in the husk
1/4 cup plus 1 tsp. extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 cups red, yellow, or orange cherry tomatoes (or a combination), halved
1/2 red bell pepper, cut into 1/4-inch dice
1/2 green bell pepper, cut into 1/4-inch dice
1/2 small red onion, cut into 1/4-inch dice
1/2 yellow bell pepper, cut into 1/4-inch dice
1/2 cup chopped fresh basil
2 small cloves garlic, finely chopped
1 recipe Simple Roasted Potatoes
3 Tbs. red-wine vinegar

Roast the corn while you roast the potatoes.

Position a rack in the center of the oven and heat the oven to 450°F. Remove the husk and put the corn on a small baking sheet. Drizzle 1 tsp. of the oil onto the corn and rub it over all the kernels. Sprinkle with kosher salt and pepper. Roast, turning the cob occasionally, until the corn kernels are light brown in a few spots, about 20 minutes. Let the corn cool. Cut the kernels from the cob.

Add the corn, tomatoes, red, green, and yellow peppers, onion, basil, and garlic to the potatoes. Toss gently. Whisk the remaining 1/4 cup oil and the vinegar together and add to the salad. Toss again. Season with kosher salt and pepper to taste and serve immediately.

*SIMPLE ROASTED POTATOES

Ingredients

2 lb. small red-skinned potatoes or small Yukon Gold potatoes, washed and cut into 3/4-inch chunks
3 Tbs. extra-virgin olive oil
Kosher salt and freshly ground black pepper

how to make

Position a rack in the center of the oven and heat the oven to 450ºF. Spread the potatoes on a heavy-duty rimmed baking sheet. Drizzle with the olive oil, sprinkle with 1 tsp. kosher salt and several grinds of pepper, and roll them around to evenly coat them with the oil. Spread the potatoes in a single layer, preferably with a cut side down. Roast them until they’re tender when pierced with a fork, 20 to 30 minutes, depending on the potatoes. The potatoes should be browned on the sides touching the pan.

Loosen the potatoes from the pan with a thin spatula and transfer them to a large serving bowl to be tossed with the salad ingredients and dressing. They can be tossed while still warm or at room temperature.

Happy Retirement, Dad!!

Two weekends ago all us kids flew up to Washington to be with Dad for his retirement dinner. Mom had made the plans, so it was a total surprise for my dad that we were all there!! And the real bonus was we didn't have any kids!!!! It was a blast! We could do WHATEVER we wanted WHENEVER we wanted. =) We love the kiddos and all, but it's fun to be just us again. Some of the employees that couldn't make it wrote some things down. There were some heartfelt words said that brought on some tears, but there was a lot of funny stories shared, too. Lots of fun!

I thought I'd try posting on this blog since I've only ever posted comments on others, so this is a test for me. I read a blog where the posters are from multiple generations in the same family, and the primary purpose is to share recipes. I thought that sounded fun, then I realized that we don't need a new blog for that, we could do that here along with whatever else we want to post. Erika regularly posts recipes on her blog, but since I don't have my own blog I'll start here.

After we put Jack and Mel on the plane back to Idaho today we went to a barbecue with some friends. I took a salad that I haven't made since last summer and I was glad I remembered it because it's so good. It's from Fine Cooking magazine, a publication I really like. Horlacher Family Update

Here's our pretty baby! She's enjoying eating Daddy's popsicle. She has tons of teeth (we're waiting on the last of the 1st molars) and she loves to use those chompers.

Spiderman... Spiderman... does whatever a spider can. Or, however that song goes. Shawn and Jacob went to a kind of Father's and Son's activity at the Provo City Library and Jacob got his face painted. He was really mad when we had to wash it off.

And here is our Princess Sarah! My really good friend and neighbor made this tutu skirt and Sarah had to model it for us. She's growing up so fast and is such a big girl!

As some of you know, Shawn will be attending law school in the fall. As of right now we are going to Southern Illinois University in Carbondale, but we are still holding out for an acceptance from University of Buffalo in New York, or possibly University of Oregon. We hope to hear from them by next week. So we are in the process of getting rid of some of our stuff so we don't have to move it all. I, of course, am in heaven because you know what that means: ORGANIZING!! I've been going through closets and cupboards like crazy. It's a lot of fun!

And Congratulations to the graduates, Shawn & Megan. I'll post some photos after all the Festivities this weekend.

Ella gets so tired after preschool...usually she falls asleep on the couch while watching SportsCenter with Dad. She couldn't last that long today! It reminds me of the time Claire fell asleep in her bowl of Cheerios...she woke-up with milk and cereal all over her face.

Hello long lost family--

Here are some pics of Katie over the last few months, she is our little terror. For a quick update, Erin and I are enjoying Pittsburgh. Erin continues to carry the family as she continues to work hard with her family's adoption business and take care of Katie during the day. I continue to spend Erin's money, as I continue my legal education. We will be heading to Guatemala in a few weeks for spring break, to see Erin's parents who live down there for half the year (doing orphanage work).

We will be heading to Charlotte, North Carolina for the summer to work at a law firm called Dechert. They are a big international firm and I will likely be doing legal work that deals with corporate finance/banking transactions. I am excited for the experience and the perks of working at a big firm, the firm flies its summer associates to London for five days over the summer (in reality they are trying to lull us into thinking life at a big law firm is fun, so I will eventually be paying for my fun times--but I might as well enjoy it for the summer). Erin is excited to get nearer to family, she has a sister and a cousin in Charlotte and her family is only a few hours away. We plan on living in Charlotte after school, so it worked out great.

Erin and I have started the process of getting ready to adopt in the fall--so we are getting excited about adding a new little one to the mix. That is what's new with us--unfortunately this summer we will not be able to make it to the family reunion due to work and a "enjoy it while we can" trip to Brazil. I hope this short blog will make up for our lack of presence at the reunion.
